East Exit is a program of scholarships open to students of art in Eastern Europe. This course will address food-related issues from an anthropological perspective. It will examine the role that food plays in shaping: group and personal identities; ethnic affiliations in a global world; religious boundaries through rituals, taboos, and avoidances; and revitalization of local and global communities. Through readings assignments and ethnographic research in the city of Perugia, students will explore how food traditions and local food are maintained and transformed over time and space, and how culinary knowledge is used to mark cultural belonging and differences. The course will focus on food as cultural heritage through an analysis of culinary tourism, food in urban settings, the culture of restaurants, and UNESCO protection of endangered diets. Furthermore, it will apply gendered perspectives on the body and analyze power dynamics in Italian families through food consumption and preparation. Students will study food as a site of cultural transmission but also of dissent and resistance. The course incorporates a semester-long ethnographic project on restaurants and street-food vendors in Umbria. Through these exercises in qualitative research, students will become engaged in original research in and out of the classroom.

The study plan The study plan of the ice cream maker course includes theoretical and practical lessons to learn how to carry out both manual processes and through the use of machinery and equipment, mixing, pasteurizing, homogenizing the ingredients according to the recipes, making a correct maturation, freezing and hardening of the product. The ice cream maker course will allow you to apply specific techniques to practice the profession in artisan workshops for the production of ice cream and ice cream parlors.

Student and graduate work are directly affected by the philosophy, teaching methodology, and physical structure of the studio in which it is created. A distinguishing characteristic of The Florence Academy of Art is that we require all our students to work from life under natural north light, in the tradition of the masters of the past whom we admire: Titian, Rembrandt, Velázquez, and Sargent, to name a few. Our students do not idly copy their subjects but instead, learn to translate nature in a way that is both anatomically accurate and artistically beautiful. Long poses may last three hours a day, five days a week for four or five weeks. This gives artists time to work out problems and produce a competent drawing or painting. Natural light allows students to select a specific area of the painting to keep in sharp focus while peripheral areas remain out of focus, just as the eye sees in nature: there are no edges in natural light, but soft gradations of light to dark. A sight-size method is a helpful tool, and we apply it in the early stages of the curriculum when students are learning measurement, proportion, and shadow shape. Artists at the advanced levels are taught to apply comparative measurements when necessary.

The program includes copying paintings of old masters and learning their original techniques while learning to restore artworks. Upon completion of the three-year program, the student graduates with a diploma. Upon completion of one - year program, the students receive a certificate.

AEF Dance Certificate Program qualifies successful students to be recognized as performers with chorographical skills. The program also serves as an ideal basis from which to access a range of dance professions.
